The sweet potato casserole on your holiday table is living a double life. For generations, American recipes and grocery store signs have treated "yam" and "sweet potato" as interchangeable words for the exact same orange vegetable. We have been eating a very delicious lie.
The Great Grocery Store Lie
You can walk into almost any supermarket in the United States, look at a bin of coppery, smooth-skinned root vegetables, and see a sign that says "Yams." They are not yams. They are just sweet potatoes (Ipomoea batatas).
For decades, American shoppers have been buying a specific variety of soft, orange-fleshed sweet potato under a borrowed name. If you pick up a Beauregard, Jewel, or Garnet variety—the ones typically masquerading as yams—you are holding a vegetable bred for moisture and sugar. When baked, the enzymes inside them activate, breaking down complex starches into maltose. That is why they get mushy and ooze that sticky, caramelized syrup on the baking sheet.
This orange vegetable isn't a different species from the pale, yellow-fleshed sweet potatoes sitting in the adjacent bin. It is just a different cultivar of the exact same plant. True yams are nowhere to be found in most standard American produce aisles.
There is a massive biological and cultural divide between what we call a yam and what actually is one. But before we get to the botany, we have to look at the money.
A Marketing Stunt in 1937
In the late 1930s, the Louisiana sweet potato industry had a serious economic problem. The national market was dominated by the East Coast—specifically farmers in states like New Jersey and Maryland who grew a firm, dry, white-fleshed sweet potato. Louisiana needed a way to stand out.
Researchers at the Louisiana Agricultural Experiment Station, led by a horticulturist named Julian C. Miller, had just developed a fantastic new type of sweet potato. It was much moister, creamier, and sweeter than the Northern varieties. It also boasted a vibrant orange color thanks to high levels of vitamin A. Louisiana farmers wanted to sell this new vegetable nationwide, but they needed a way to make sure shoppers knew they were buying the premium Southern variety, not the dry East Coast one.
They decided to hijack a word.
Enslaved West Africans in the South had long referred to sweet potatoes using words like "nyami," which translates to "to eat" in several West African dialects. The sweet potato vaguely reminded them of the true yams they grew back home. Recognizing a catchy distinction, the Louisiana sweet potato industry officially coined the term "yam" in 1937 as part of a national marketing campaign.
The rebranding worked almost too well. The campaign successfully convinced the American public that this soft, orange root was a completely different vegetable called a yam. Soon, recipes for "candied yams" and "baked yams" were printed in newspapers across the country, cementing a botanical falsehood into American culinary tradition.
The Federal Compromise
Is it legal to just sell one vegetable under the name of another? Not entirely.
The United States Department of Agriculture eventually noticed that the entire country was mislabeling a major agricultural crop. However, because the term had become deeply ingrained in the culture and the economy, they didn't ban the word outright. Instead, they created a very specific regulatory compromise.
According to USDA labeling requirements, if a producer wants to sell sweet potatoes as yams, they must also include the words "sweet potato" on the packaging to protect consumers from deception.
This is why you will often see canned yams in the baking aisle with the word "Yams" in a giant, festive font, followed by "sweet potatoes" in tiny print right underneath. The federal government requires it. Fresh produce bins are a little more relaxed, which is why grocery stores usually get away with a single deceptive placard.
Interestingly, the tide is starting to turn. Today, many commercial sweet potato growers in California are actively lobbying to drop the word "yam" from marketing materials altogether. They argue the dual-naming system just confuses shoppers who are trying to figure out which potato to buy for Thanksgiving.
Morning Glories vs. Lilies
Botanically, they are complete strangers. Sweet potatoes belong to the Convolvulaceae family. If you look at a sweet potato plant growing in the dirt, you will see it produces beautiful, trumpet-shaped flowers. It is a direct relative of the morning glory.
True yams belong to the Dioscoreaceae family. They are not even dicots (plants with two seed leaves). They are monocots, making them more closely related to grasses, lilies, and palms than to any potato.
The part we eat is different, too.
A sweet potato is an enlarged storage root. It grows underground as a swollen part of the plant's root system, storing energy to help the vine survive the winter. A true yam is a tuber. Tubers are actually modified stems, much like a regular white potato.
They even grow differently. While sweet potato vines trail along the ground like a groundcover, true yam vines are vigorous climbers that need trellises or trees to support their upward growth. If you put a sweet potato and a true yam side by side in a garden, no botanist would ever confuse the two.
Meet the Actual Yam
A real yam can grow up to five feet long and weigh over 100 pounds. You are highly unlikely to find one in a standard American supermarket, though they are common in international markets that stock Caribbean, West African, or Asian ingredients.
Instead of the smooth, thin, coppery skin of a sweet potato, a true yam has rough, scaly skin that looks like tree bark. The flesh inside is usually white, purple, or reddish. When you cut into it, you won't find the watery, sugary interior of an orange sweet potato. True yam flesh is extremely starchy, dry, and earthy.
In West Africa, the yam is a foundational staple crop with immense cultural weight. The Igbo people of Nigeria, for example, consider the yam the "king of crops" and celebrate the New Yam Festival annually, offering the first harvest to ancestors before anyone consumes the crop.
Culinary application is completely different. True yams are often boiled and pounded into a thick, dough-like paste called fufu, which is served alongside rich soups and stews. You tear off a piece of the fufu and use it to scoop up the broth. If you try to make fufu with an American sweet potato, you will fail. The sugar and moisture content is completely wrong for the job, and you'll just end up with a wet puree.
Toxins in the Raw Root
This is where the distinction between the two plants becomes a matter of safety.
You can eat a raw sweet potato if you really want to. It will be crunchy, starchy, and a bit fibrous, but it will not hurt you. Sweet potatoes do not contain any natural compounds that threaten human digestion when consumed uncooked.
True yams demand much more respect. Many varieties of wild yams, and even some cultivated ones, contain cyanogenic glycosides and a neurotoxic alkaloid called dioscorine. Historically, extracts from these highly toxic wild yams were used as monkey poison or applied to hunting arrows in parts of Asia and Africa.
If eaten raw, the dioscorine in true yams acts as a convulsant. It blocks the nicotinic acetylcholine receptors in the nervous system, which can cause severe illness, nausea, and nerve paralysis.
This doesn't mean yams are inherently dangerous to eat—they just require proper processing. Traditional preparation methods across West Africa and Asia involve extensive peeling, soaking in salt water, and boiling. According to research on wild yams, boiling the tuber extensively successfully degrades the dioscorine to safe levels, rendering the food completely harmless and highly nutritious.
Beta-Carotene vs. Starch
11,509 micrograms. That is roughly how much beta-carotene you get in 100 grams of a baked orange sweet potato, according to the USDA FoodData Central database. Your body converts that brilliant orange pigment directly into Vitamin A, making the sweet potato one of the most efficient ways to support vision and immune health.
True yams contain almost zero beta-carotene because they lack that orange pigment. Their nutritional profile looks entirely different.
Instead of vitamins and sugars, true yams excel at delivering dense, sustained energy. A 100-gram serving of true yam provides about 27 grams of carbohydrates, almost entirely in the form of complex starches, with very little simple sugar. They have a lower moisture content and a much more neutral flavor profile—tasting somewhat like a cross between a yuca and a russet potato.
An orange sweet potato, by contrast, gets a significant portion of its carbohydrate profile from naturally occurring sugars. They serve completely different culinary purposes. One is a savory, neutral base meant to absorb rich braising liquids and provide bulk. The other is practically a dessert disguised as a root vegetable.
Bottom Line
The next time you stand in the produce aisle weighing your options for a holiday pie, you'll know exactly what you are holding. The word on the sign might say yam, but the smooth copper skin gives it away. We might be eating a 90-year-old marketing gimmick, but at least it tastes good baked with butter.
